When spring is in its prime, before giving way to the hot summer days, an unusual “pink harvest” comes to life in Chianti. Rose cultivation is a custom that has come from Liguria to this area where it has found in the ancient local roses one of its greatest expressions. For three Sundays in the month of May, we will in fact have the privilege of living a unique experience among the roses of a small family-run organic farm, which for more than fifteen years has been cultivating roses to produce syrups and preserves made from petals. This is a peculiar practice, not so common in our country, unlike in the Arab world, and even in Eastern Europe. Our exploration, at the time of year when the strongest and most pleasant floral fragrances are in the air, will begin just inside the rose garden with the harvesting of roses. We will then move inside the workshop, to begin the different stages of processing the petals from which, step by step, we will be able to obtain a delicious rose jam. Thanks to this experience we will have the opportunity to learn more about a tradition practiced for food, decorative and also curative purposes, due to the beneficial properties that roses, not only beautiful and fragrant, can give us.
